Provisioning - Yuzu Juice

 A currently very sought-after ingredient in yacht provisioning is Yuzu. Yuzu is a Japanese citrus fruit, believed to be a hybrid of sour mandarin and Ichang papeda, can only be described as extraordinary. Its flavour is likened to something between a lemon and a lime and looks like a very small grapefruit. Rarely eaten as a fruit, it is used to garnish some dishes, and its juice is commonly used as a seasoning. It is found in ponzu sauce, as yuzu vinegar, combined with honey in  yuzu hachimitsu -a kind of syrup that is used to make yuzu tea  or as an ingredient in alcoholic drinks such as the yuzu sour.  Beginning in the early 21st century, yuzu has been increasingly used by chefs in the United States and other Western nations, achieving notice in a 2003 article in The New York Times.
